Description
Experience the warmth of mushroom rice, a delightful combination of earthy mushrooms and fluffy grains that creates a comforting meal for any occasion.
Ingredients
Scale
- 1 cup long-grain rice
- 2 cups fresh mushrooms, sliced
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 cups low-sodium vegetable broth
- 2 tablespoons extra virgin olive oil
- 1 tablespoon butter
- Fresh parsley, chopped (optional)
Instructions
- Rinse the rice under cold water until clear to achieve a fluffy texture.
- In a large skillet, heat olive oil over medium heat. Sauté onions and garlic until softened, about 3-4 minutes.
- Add sliced mushrooms and cook until golden brown, releasing their moisture for about 5-7 minutes.
- Stir in the rinsed rice and sauté briefly for 1-2 minutes to coat with oil.
- Pour in vegetable broth, bring to a gentle boil. Reduce heat, cover tightly, and simmer for 15 minutes or until rice is cooked through.
- Remove from heat; stir in butter and adjust seasoning if needed. Let sit covered for an additional 5 minutes before fluffing with a fork.
Notes
- For added flavor depth, use a mix of shiitake and cremini mushrooms.
- Feel free to incorporate spinach or swap in other mushrooms based on preference.
- Store leftovers in an airtight container for up to three days; reheat gently on the stove with broth.
