- 1 can (13.5 oz) full-fat coconut milk
- 3 tbsp massaman curry paste
- 2 medium potatoes, diced
- 1 large onion, diced
- ½ cup roasted unsalted peanuts
- 1 cup mixed bell peppers, sliced
- 2 tbsp fresh lime juice
- 1 tsp sugar
- Salt & pepper to taste
Instructions
- Gather all ingredients in one place for a smooth cooking experience.
- Heat oil in a large pot over medium heat. Sauté diced onions until translucent (about 5 minutes).
- Add boneless chicken thighs to the pot; season with salt and pepper. Cook until golden brown on all sides (6-8 minutes).
- Stir in massaman curry paste until well combined, then pour in coconut milk slowly while mixing.
- Add diced potatoes and bell peppers; bring to a simmer over low heat. Cook uncovered for about 25-30 minutes until potatoes are tender.
- Just before serving, stir in fresh lime juice and chopped peanuts; taste and adjust seasoning as needed.
