  • 1.5 lbs boneless chicken thighs
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp massaman curry paste
  • 2 medium potatoes, diced
  • 1 large onion, diced
  • ½ cup roasted unsalted peanuts
  • 1 cup mixed bell peppers, sliced
  • 2 tbsp fresh lime juice
  • 1 tsp sugar
  • Salt & pepper to taste

Instructions

  1. Gather all ingredients in one place for a smooth cooking experience.
  2. Heat oil in a large pot over medium heat. Sauté diced onions until translucent (about 5 minutes).
  3. Add boneless chicken thighs to the pot; season with salt and pepper. Cook until golden brown on all sides (6-8 minutes).
  4. Stir in massaman curry paste until well combined, then pour in coconut milk slowly while mixing.
  5. Add diced potatoes and bell peppers; bring to a simmer over low heat. Cook uncovered for about 25-30 minutes until potatoes are tender.
  6. Just before serving, stir in fresh lime juice and chopped peanuts; taste and adjust seasoning as needed.
