Description

Indulge in the warmth of hearty goulash, where tender beef and vibrant vegetables create a rich, flavorful stew that’s perfect for cozy dinners or family gatherings.

Ingredients

Scale
  • 1.5 lbs beef chuck roast, cut into bite-sized pieces
  • 2 medium sweet onions, diced
  • 2 bell peppers (red and yellow), sliced
  • 4 cloves garlic, minced
  • 3 tbsp tomato paste
  • 4 cups beef broth
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups cooked pasta or rice for serving (optional)

Instructions

  1. 1. Prepare the ingredients: Chop the beef, dice the onions, slice the bell peppers, and mince the garlic.
  2. 2. Sauté aromatics: Heat oil in a large pot over medium heat. Add onions; sauté until translucent (about 5 minutes). Stir in minced garlic for another minute.
  3. 3. Brown the beef: Increase heat to medium-high; add beef cubes seasoned with salt and pepper. Cook until browned on all sides (6-8 minutes).
  4. 4. Add vegetables: Stir in bell peppers and tomato paste; cook until everything is coated (about 3 minutes).
  5. 5. Pour in broth: Add beef broth while scraping up any browned bits from the bottom of the pot. Stir in smoked paprika and oregano.
  6. 6. Simmer: Bring to a boil; reduce heat to low, cover partially, and let simmer for about 1.5 hours until beef is tender.

Notes

  • Customize your goulash by adding your favorite vegetables or spices.
  •  For vegetarian goulash, replace the meat with lentils or hearty veggies.
  • Store leftovers in an airtight container in the fridge for up to three days; reheat gently.
