  • 3 cups fresh spinach, washed
  • 8 oz cream cheese, softened
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup pine nuts, toasted (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper and sauté until golden brown, about 6–7 minutes per side.
  2. Add minced garlic and sun-dried tomatoes; cook until fragrant.
