Ingredients

  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, diced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup uncooked long-grain white rice
  • 1 cup frozen peas (or fresh)
  • 2 tbsp olive oil
  • Salt, pepper, and paprika to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté garlic and onion until translucent.
  3. Add chicken breasts; cook until golden brown on both sides (5-7 minutes per side).
  4. Pour in chicken broth and scrape the bottom of the pan for flavor. Stir in heavy cream, salt, pepper, and paprika.
  5. Mix in uncooked rice and peas until well combined. Transfer to the baking dish.
