Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- In another bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
- In a separate bowl, cream the softened butter and sugar until light and fluffy.
- Beat in eggs one at a time and add vanilla extract.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- If using walnuts, fold them in now before pouring the batter into the prepared loaf pan.
- Bake for about 60 minutes or until golden brown; a toothpick inserted should come out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
