  • ½ cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  4. In a separate bowl, cream the softened butter and sugar until light and fluffy.
  5. Beat in eggs one at a time and add vanilla extract.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. If using walnuts, fold them in now before pouring the batter into the prepared loaf pan.
  8. Bake for about 60 minutes or until golden brown; a toothpick inserted should come out clean.
  9. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
