- 6 cups stale bread, cubed (about 1 loaf)
- 3 ripe bananas, mashed
- 2 cups heavy cream
- 4 large eggs
- 1 cup brown sugar
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 3 tbsp unsalted butter (for greasing)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cube the stale bread and place it in a large bowl.
- In another bowl, mash the ripe bananas until smooth with some chunks remaining.
- Whisk together the eggs, heavy cream, brown sugar, cinnamon, and vanilla extract in a separate bowl.
- Pour the custard mixture over the cubed bread and mashed bananas. Stir gently until combined.
- Transfer to a greased baking dish and bake for 30-35 minutes or until golden brown on top.
- Allow to cool slightly before serving. Drizzle with caramel sauce or whipped cream if desired.
Notes
- For best flavor, use day-old bread to ensure good absorption of the custard mixture.
- To prevent browning, slice bananas just before mixing them in.
