Instructions
- Preheat your oven to 325°F (160°C).

- In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Fold in mashed ube, sour cream, and vanilla extract until fully blended.
- Pour the filling over the crust and bake for 50-60 minutes until edges are set but the center is slightly jiggly.
- Allow cheesecake to cool completely before refrigerating for at least 4 hours or overnight.
