Ingredients

  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 cup mashed ube (purple yam)
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan to form the crust.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in mashed ube, sour cream, and vanilla extract until fully blended.
  5. Pour the filling over the crust and bake for 50-60 minutes until edges are set but the center is slightly jiggly.
  6. Allow cheesecake to cool completely before refrigerating for at least 4 hours or overnight.
