Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 8 oz cream cheese, softened
  • 1/3 cup honey
  • 1 cup fresh peaches, diced
  • 1 tsp vanilla extract
  • 1/4 cup whole milk

Instructions

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour and baking powder.
  3. In another bowl, cream the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and cream cheese until smooth.
  4. Gradually add the dry ingredients to the wet mixture, alternating with milk and honey. Gently fold in diced peaches.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until golden brown. Cool on wire racks.
  6. For frosting, whip cream cheese with honey until smooth and spread over cooled cupcakes.
