- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1/2 cup honey
- 1/3 cup balsamic vinegar
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 2 tsp Dijon mustard
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a bowl, whisk together honey, balsamic vinegar, olive oil, minced garlic, Dijon mustard, salt, and pepper until smooth. Marinate the chicken for 15 minutes in half of the marinade.
- Heat olive oil in a large skillet over medium-high heat. Sear the marinated chicken breasts for 3-4 minutes on each side until golden brown.
- Pour the remaining marinade over the chicken in the skillet. Transfer to the oven and bake uncovered for 20-25 minutes until the internal temperature reaches 165°F (75°C). Baste halfway through.
- Let it rest for five minutes before slicing and serve drizzled with extra sauce over rice or roasted vegetables.
