Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup honey
  • 1/3 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 2 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together honey, balsamic vinegar, olive oil, minced garlic, Dijon mustard, salt, and pepper until smooth. Marinate the chicken for 15 minutes in half of the marinade.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the marinated chicken breasts for 3-4 minutes on each side until golden brown.
  4. Pour the remaining marinade over the chicken in the skillet. Transfer to the oven and bake uncovered for 20-25 minutes until the internal temperature reaches 165°F (75°C). Baste halfway through.
  5. Let it rest for five minutes before slicing and serve drizzled with extra sauce over rice or roasted vegetables.
