- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 3 tablespoons tahini
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt (adjust to taste)
- 2–4 tablespoons water or aquafaba
Instructions
- 1. Place the drained chickpeas and minced garlic in a food processor; blend until finely chopped.
- 2. Add fresh lemon juice and tahini; blend until smooth.
- 3. While processing on low speed, drizzle in olive oil, then add ground cumin and salt. Taste and adjust seasoning as desired.
- 4. Gradually pour in water or aquafaba until you achieve your preferred consistency; blend until creamy.
- 5. Transfer hummus to a serving bowl; garnish with a drizzle of olive oil and a sprinkle of paprika or herbs.
Notes
To enhance flavor, consider roasting the garlic before adding it to the mix.
