Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt (adjust to taste)
  • 24 tablespoons water or aquafaba

Instructions

  1. 1. Place the drained chickpeas and minced garlic in a food processor; blend until finely chopped.
  2. 2. Add fresh lemon juice and tahini; blend until smooth.
  3. 3. While processing on low speed, drizzle in olive oil, then add ground cumin and salt. Taste and adjust seasoning as desired.
  4. 4. Gradually pour in water or aquafaba until you achieve your preferred consistency; blend until creamy.
  5. 5. Transfer hummus to a serving bowl; garnish with a drizzle of olive oil and a sprinkle of paprika or herbs.

Notes
