- 1 lb beef chuck roast, cut into 1-inch pieces
- 3/4 cup pearl barley, rinsed
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium beef broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, brown the beef chuck roast on all sides for about 5-7 minutes.
- Add diced onion and minced garlic; cook until onions are translucent.
- Stir in carrots and celery; cook for another 3 minutes.
- Pour in beef broth along with rinsed barley, bay leaves, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for about 1.5 hours or until the beef is fork-tender.
