Description

Ingredients

  • 1 lb beef chuck roast, cut into 1-inch pieces
  • 3/4 cup pearl barley, rinsed
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the beef chuck roast on all sides for about 5-7 minutes.
  2. Add diced onion and minced garlic; cook until onions are translucent.
  3. Stir in carrots and celery; cook for another 3 minutes.
  4. Pour in beef broth along with rinsed barley, bay leaves, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat to low and simmer for about 1.5 hours or until the beef is fork-tender.
