- 4 large bell peppers
- 1 pound ground turkey
- 1 cup cooked rice (white or brown)
- 1 cup diced tomatoes (canned or fresh)
- 1 medium onion, chopped
- 2 tsp cumin
- 2 tsp paprika
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté the chopped onion until translucent. Add the diced tomatoes and cook for an additional 5 minutes.
- Stir in the ground turkey, cumin, and paprika; cook until browned (about 7-10 minutes).
- Mix in the cooked rice and simmer for about 3 minutes.
- Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- Stuff each pepper generously with the turkey mixture. Top with cheese if desired.
- Cover loosely with foil and bake for 25-30 minutes until peppers are tender.
Notes
- Feel free to add black beans or corn for extra texture! For a vegetarian option, substitute ground turkey with cooked quinoa or tofu.
