  • 1 pound ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 medium onion, chopped
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion until translucent. Add the diced tomatoes and cook for an additional 5 minutes.
  3. Stir in the ground turkey, cumin, and paprika; cook until browned (about 7-10 minutes).
  4. Mix in the cooked rice and simmer for about 3 minutes.
  5. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  6. Stuff each pepper generously with the turkey mixture. Top with cheese if desired.
  7. Cover loosely with foil and bake for 25-30 minutes until peppers are tender.
