  • 14 oz canned diced tomatoes (low sodium)
  • 2 tbsp olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. Chop onion and bell peppers into small pieces.
  2. Heat olive oil in a skillet over medium heat; add onions and sauté until translucent.
  3. Add ground turkey to the skillet, breaking it up as it cooks until browned (about 7-8 minutes).
  4. Stir in bell peppers, garlic, cumin, paprika, salt, and pepper; cook for another 3-4 minutes.
  5. Pour in canned tomatoes with their juices and simmer on low for about 10 minutes to meld flavors.
