Grilled Stone Fruit Salad is a vibrant summer dish that combines juicy grilled peaches, plums, and nectarines with peppery arugula and creamy feta, all drizzled with balsamic glaze for a refreshing twist.


Ingredients

  • 3 medium peaches, halved and pitted
  • 3 medium plums, halved and pitted
  • 3 medium nectarines, halved and pitted
  • 4 cups fresh arugula
  • 1 cup crumbled feta cheese
  • 2 tablespoons balsamic glaze
  • 2 tablespoons extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat the grill to medium-high heat (400°F/200°C).
  2. Brush peach, plum, and nectarine halves lightly with olive oil.
  3. Grill fruit cut-side down for 3-4 minutes until grill marks appear.
  4. In a bowl, toss arugula with salt and pepper.
  5. Add crumbled feta on top of arugula and drizzle with balsamic glaze.
  6. Arrange grilled fruits over the salad mix and serve immediately.
