- 3 medium plums, halved and pitted
- 3 medium nectarines, halved and pitted
- 4 cups fresh arugula
- 1 cup crumbled feta cheese
- 2 tablespoons balsamic glaze
- 2 tablespoons extra virgin olive oil
- Salt & pepper to taste
Instructions
- Preheat the grill to medium-high heat (400°F/200°C).
- Brush peach, plum, and nectarine halves lightly with olive oil.
- Grill fruit cut-side down for 3-4 minutes until grill marks appear.
- In a bowl, toss arugula with salt and pepper.
- Add crumbled feta on top of arugula and drizzle with balsamic glaze.
- Arrange grilled fruits over the salad mix and serve immediately.
