Description

Grilled Corn Black Bean Salad is a fresh, colorful dish that combines sweet corn and hearty black beans, perfect for summer gatherings or as a healthy meal option.


Ingredients

  • 4 ears fresh corn on the cob
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, diced (mix of colors)
  • ½ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Grill shucked corn until slightly charred on all sides, about 10 minutes. Let cool.
  2. While the corn cools, dice the bell peppers and finely chop the red onion. Rinse the black beans under cold water.
  3. Once cooled, carefully slice kernels off the corn cobs.
  4. In a large mixing bowl, combine grilled corn, bell peppers, black beans, red onion, cilantro, lime juice, olive oil, salt, and pepper. Mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
