- 4 ears fresh corn on the cob
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup bell peppers, diced (mix of colors)
- ½ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Grill shucked corn until slightly charred on all sides, about 10 minutes. Let cool.
- While the corn cools, dice the bell peppers and finely chop the red onion. Rinse the black beans under cold water.
- Once cooled, carefully slice kernels off the corn cobs.
- In a large mixing bowl, combine grilled corn, bell peppers, black beans, red onion, cilantro, lime juice, olive oil, salt, and pepper. Mix well.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
