Description

A refreshing blend of vibrant greens, crunchy vegetables, and a creamy herb dressing, this salad is perfect for any meal or gathering.

Ingredients

Scale
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. Dice the cucumber and halve the cherry tomatoes; set aside.
  3. In a bowl, combine Greek yogurt, lemon juice, garlic, salt, pepper, basil, and parsley. Whisk until smooth.
  4. In a large mixing bowl, toss together the greens with cucumbers and tomatoes. Drizzle with dressing and gently toss to coat.
  5. Fold in avocado just before serving to maintain freshness.

Notes

  •  Customize your salad by adding ingredients like roasted chickpeas or nuts for added crunch.
  •  For maximum freshness, store the salad without dressing until ready to serve.
