Ingredients

  • 4 cups mixed greens (arugula, spinach, romaine)
  • 4 oz soft goat cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the mixed greens under cold water and dry thoroughly.
  2. Halve the cherry tomatoes and dice the cucumber. Thinly slice the red onion.
