Instructions
- In a skillet over medium heat, sauté ground chicken or turkey until browned. Add diced bell peppers and onions; cook until softened.
- Stir in taco seasoning and cheddar cheese until well combined and melted.
- Lay an egg roll wrapper diagonally. Place 2 tablespoons of filling near one corner, fold over the filling, and roll tightly while tucking in sides.
- Heat vegetable oil in a deep pan to 350°F (175°C). Fry egg rolls in batches for 3-4 minutes until golden brown, turning occasionally.
- Drain on paper towels and serve hot with your favorite dipping sauces.
