Description

Ingredients

  • 1 lb ground chicken or turkey
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, diced
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • Vegetable oil for frying

Instructions

  1. In a skillet over medium heat, sauté ground chicken or turkey until browned. Add diced bell peppers and onions; cook until softened.
  2. Stir in taco seasoning and cheddar cheese until well combined and melted.
  3. Lay an egg roll wrapper diagonally. Place 2 tablespoons of filling near one corner, fold over the filling, and roll tightly while tucking in sides.
  4. Heat vegetable oil in a deep pan to 350°F (175°C). Fry egg rolls in batches for 3-4 minutes until golden brown, turning occasionally.
  5. Drain on paper towels and serve hot with your favorite dipping sauces.
