Description

Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 1/2 cup Mayonnaise
  • 1/2 cup Greek Yogurt
  • Juice of 1 Lemon
  • 2 tbsp Fresh Parsley, chopped
  • 2 tbsp Fresh Dill, chopped
  • 1/4 cup Red Onion, finely chopped
  • Salt and Pepper to taste

Instructions

  1. Wash and cut the Yukon Gold potatoes into bite-sized pieces. Boil in salted water until fork-tender (about 15 minutes). Drain and let cool.
  2. In a large bowl, mix mayonnaise, Greek yogurt, and lemon juice until smooth.
  3. Add chopped parsley, dill, red onion, salt, and pepper to the dressing.
  4. Gently fold in the cooled potatoes until evenly coated.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
