- 2 lbs Yukon Gold Potatoes
- 1/2 cup Mayonnaise
- 1/2 cup Greek Yogurt

- 1/4 cup Red Onion, finely chopped
- Salt and Pepper to taste
Instructions
- Wash and cut the Yukon Gold potatoes into bite-sized pieces. Boil in salted water until fork-tender (about 15 minutes). Drain and let cool.
- In a large bowl, mix mayonnaise, Greek yogurt, and lemon juice until smooth.
- Add chopped parsley, dill, red onion, salt, and pepper to the dressing.
- Gently fold in the cooled potatoes until evenly coated.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
