  • 1 cup caramelized onions (about 2 medium onions)
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup low-sodium beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil (for searing)

Instructions

  1. In a skillet over medium heat, melt butter and add sliced onions. Cook until golden brown, about 20 minutes.
  2. In a bowl, combine ground beef, breadcrumbs, minced garlic, Parmesan cheese, thyme, salt, and pepper. Mix in half of the caramelized onions.
  3. Shape the mixture into golf ball-sized meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  4. Heat olive oil in a skillet over medium-high heat. Sear the meatballs until browned on all sides (5-7 minutes).
  5. Pour in beef broth around the meatballs, top with remaining caramelized onions, cover, and simmer for 15 minutes.
  6. Serve warm on a platter with extra broth drizzled on top.
