- 1/2 cup low-sodium beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil (for searing)
Instructions
- In a skillet over medium heat, melt butter and add sliced onions. Cook until golden brown, about 20 minutes.
- In a bowl, combine ground beef, breadcrumbs, minced garlic, Parmesan cheese, thyme, salt, and pepper. Mix in half of the caramelized onions.
- Shape the mixture into golf ball-sized meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
- Heat olive oil in a skillet over medium-high heat. Sear the meatballs until browned on all sides (5-7 minutes).
- Pour in beef broth around the meatballs, top with remaining caramelized onions, cover, and simmer for 15 minutes.
- Serve warm on a platter with extra broth drizzled on top.
