Ingredients

  • 1 pound skinless, boneless chicken breast
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables thoroughly and cut chicken into bite-sized pieces.
  2. In a bowl, combine olive oil, garlic powder, salt, and pepper. Add chicken and toss until well-coated; let marinate for at least 30 minutes.
  3. Thread the marinated chicken and vegetables onto skewers alternately.
  4. Preheat grill to medium-high (about 400°F / 200°C).
  5. Grill skewers for 10-15 minutes, turning occasionally until the chicken is cooked through (internal temperature should reach 165°F / 75°C) and veggies are tender.
  6. Remove from the grill and allow to rest briefly before serving.
