  • 2 bell peppers (red or yellow), sliced
  • 1 medium red onion, thinly sliced
  • ½ cup fresh cilantro, chopped
  • 4 large flour or whole-wheat tortillas
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp southwest seasoning mix
  • 4 cups lettuce leaves (romaine or butter lettuce)
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by washing and slicing the vegetables and chopping cilantro.
  2. Season the chicken breasts with southwest seasoning. Let them rest while preheating a skillet over medium heat.
