Description
Warm and comforting, Giouvetsi Greek Beef Stew with Orzo combines tender beef and chewy orzo in a savory tomato sauce, making it an ideal family meal.
Ingredients
Scale
- 2 lbs beef chuck roast, cut into bite-sized pieces
- 1 cup orzo pasta
- 1 large onion, chopped
- 4 cloves garlic, minced
- 28 oz canned crushed tomatoes
- 3 cups low-sodium beef broth
- 2 tsp dried oregano
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
- Increase heat to medium-high and brown beef chunks in batches until golden brown on all sides.
- Stir in minced garlic, dried oregano, salt, and pepper; cook for about 30 seconds or until fragrant.
- Add crushed tomatoes and beef broth, scraping up any browned bits from the bottom.
- Bring to a gentle boil, then reduce heat to low. Cover partially and simmer for about 1 hour until beef is tender.
- During the last 10 minutes of cooking, stir in orzo pasta and cook until al dente.
Notes
- For added flavor, consider using fresh herbs instead of dried.
- Substitute beef with chicken or lentils for alternative protein options.
- Pair with a simple green salad and crusty bread for a complete meal.
