Ingredients

  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, chopped
  • 2 large sweet onions, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat oil over medium-high heat. Sear the chuck roast until browned on all sides (about 4-5 minutes per side). Remove from pot.
  3. Add onions and garlic to the pot; sauté for about 2 minutes until fragrant.
  4. Return the roast to the pot and add carrots and potatoes.
  5. Pour in beef broth until the roast is submerged halfway. Add thyme and rosemary.
  6. Cover tightly and slow-cook in the oven for 3-4 hours until fork-tender.
