- 3 lbs chuck roast
- 4 medium carrots, chopped
- 4 medium Yukon Gold potatoes, chopped
- 2 large sweet onions, diced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat oil over medium-high heat. Sear the chuck roast until browned on all sides (about 4-5 minutes per side). Remove from pot.
- Add onions and garlic to the pot; sauté for about 2 minutes until fragrant.
- Return the roast to the pot and add carrots and potatoes.
- Pour in beef broth until the roast is submerged halfway. Add thyme and rosemary.
- Cover tightly and slow-cook in the oven for 3-4 hours until fork-tender.
