- 1 lb boneless, skinless chicken thighs
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp smoked paprika
- Juice of 1 lemon
- 3 tbsp olive oil
- 4 pita breads or flatbreads
- Your choice of toppings: lettuce, tomatoes, cucumbers, pickles
Instructions
- In a bowl or zip-top bag, mix minced garlic, cumin, coriander, paprika, lemon juice, and olive oil. Add chicken thighs and coat well. Marinate for at least 1 hour (or overnight).
- Preheat grill to medium-high heat (or broiler to high).
- Grill or broil marinated chicken for about 6-7 minutes per side until cooked through (internal temperature should reach 165°F).
- Remove from heat and let rest for 5 minutes before slicing into strips.
- Assemble wraps by placing sliced chicken and your favorite toppings inside pita bread.
- Serve immediately and enjoy!
