Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp smoked paprika
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • 4 pita breads or flatbreads
  • Your choice of toppings: lettuce, tomatoes, cucumbers, pickles

Instructions

  1. In a bowl or zip-top bag, mix minced garlic, cumin, coriander, paprika, lemon juice, and olive oil. Add chicken thighs and coat well. Marinate for at least 1 hour (or overnight).
  2. Preheat grill to medium-high heat (or broiler to high).
  3. Grill or broil marinated chicken for about 6-7 minutes per side until cooked through (internal temperature should reach 165°F).
  4. Remove from heat and let rest for 5 minutes before slicing into strips.
  5. Assemble wraps by placing sliced chicken and your favorite toppings inside pita bread.
  6. Serve immediately and enjoy!
