Ingredients

  • 4 large eggs
  • 1 cup diced bell peppers (mixed colors)
  • ½ cup diced sweet onion
  • 2 tsp extra virgin olive oil
  • 2 tsp taco seasoning
  • ½ cup shredded cheddar cheese
  • 4 small flour or corn tortillas
  • Fresh cilantro for garnish

Instructions

  1. Dice the bell peppers and sweet onion.
  2. In a large skillet over medium heat, add olive oil. Sauté the diced onions and bell peppers for about 5 minutes until tender.
  3. In a bowl, whisk together the eggs and taco seasoning. Pour over the sautéed vegetables and gently stir until the eggs begin to set (about 3-4 minutes).
  4. Sprinkle shredded cheese on top of the eggs, cover briefly until melted (1-2 minutes).
  5. Warm tortillas in a separate pan for about 30 seconds on each side.
  6. Serve generous portions of the cheesy egg mixture onto warm tortillas and top with fresh cilantro.
