- 1 cup diced bell peppers (mixed colors)
- ½ cup diced sweet onion
- 2 tsp extra virgin olive oil
- 2 tsp taco seasoning
- ½ cup shredded cheddar cheese
- 4 small flour or corn tortillas
- Fresh cilantro for garnish
Instructions
- Dice the bell peppers and sweet onion.
- In a large skillet over medium heat, add olive oil. Sauté the diced onions and bell peppers for about 5 minutes until tender.
- In a bowl, whisk together the eggs and taco seasoning. Pour over the sautéed vegetables and gently stir until the eggs begin to set (about 3-4 minutes).
- Sprinkle shredded cheese on top of the eggs, cover briefly until melted (1-2 minutes).
- Warm tortillas in a separate pan for about 30 seconds on each side.
- Serve generous portions of the cheesy egg mixture onto warm tortillas and top with fresh cilantro.
