- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 chipotle peppers in adobo sauce (plus 1 tbsp sauce)
- 2 tbsp olive oil
- Juice of 2 limes
- 4 garlic cloves, crushed
- 1 tsp cumin powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp honey
Instructions
- Preheat oven to 400°F (200°C). Lightly spray a baking dish with non-stick spray.
- In a mixing bowl, combine chipotle peppers, adobo sauce, olive oil, lime juice, garlic, cumin, salt, pepper, and honey. Blend until smooth.
- Place chicken breasts in the baking dish and pour the marinade over them. Rub the marinade thoroughly into the chicken.
- Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
- Let rest for 5 minutes before slicing. Serve with your favorite sides.
