Ingredients

  • 4 cups vegetable broth
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme (or herbs of choice)
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions

  1. Gather all ingredients and chop vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté diced onions and minced garlic until fragrant (3-4 minutes).
  3. Add chopped carrots and celery; sauté until slightly softened (about 5 minutes).
  4. Pour in the vegetable broth along with herbs. Bring to a simmer.
  5. Gently add fish fillets; cook until they flake easily (approximately 6-8 minutes).
  6. Stir in lemon juice and season with salt and black pepper. Let sit for a few minutes before serving.
