Ingredients

  • 4 boneless, skinless chicken breasts (1.5 pounds)
  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt & pepper, to taste

Instructions

  1. In a large bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken breasts and toss to coat evenly. Let marinate for at least 30 minutes.
  2. While marinating, slice the bell peppers and onion into strips.
  3. Heat a skillet over medium-high heat. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove chicken from the skillet and let rest before slicing into strips.
  5. In the same skillet, add sliced peppers and onion. Sauté for about 5 minutes until tender-crisp.
  6. Serve sliced chicken with sautéed veggies in tortillas or over rice.
