- 4 boneless, skinless chicken breasts (1.5 pounds)
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp smoked paprika
- Juice of 2 limes
- 2 tbsp olive oil
- Salt & pepper, to taste
Instructions
- In a large bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken breasts and toss to coat evenly. Let marinate for at least 30 minutes.
- While marinating, slice the bell peppers and onion into strips.
- Heat a skillet over medium-high heat. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
- Remove chicken from the skillet and let rest before slicing into strips.
- In the same skillet, add sliced peppers and onion. Sauté for about 5 minutes until tender-crisp.
- Serve sliced chicken with sautéed veggies in tortillas or over rice.
