Ingredients
Scale
- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 tsp instant yeast (1 packet)
- 1/2 cup whole milk, warmed
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 cup fresh raspberries (or thawed frozen raspberries)
- Optional: powdered sugar for dusting
Instructions
- In a large bowl, whisk together flour, sugar, and instant yeast. Add warmed milk and eggs; gently fold until combined.
- Knead dough on a floured surface for about 10 minutes until smooth. Gradually add softened butter, kneading until fully integrated.
- Place dough in a greased bowl, cover with plastic wrap, and let rise in a warm spot until doubled (about 1 hour).
- While the dough rises, mash raspberries with a little sugar until chunky; set aside.
- Punch down the risen dough and roll it out into a rectangle. Spread the raspberry filling evenly over the dough and roll tightly into a log.
- Place the rolled dough in a greased loaf pan and let it rise again until nearly doubled (about 30 minutes).
- Preheat oven to 350°F (175°C). Bake for 30–35 minutes or until golden brown and hollow when tapped. Let cool before slicing.
Notes
- Experiment with different fruit fillings like blueberries or strawberries.
- Add lemon zest to the raspberry mixture for an extra zing.
- Make sure all ingredients are at room temperature for optimal results.
