Ingredients

  • 1 lb lean ground beef
  • 2 bell peppers (1 green, 1 red), chopped
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 tsp Italian seasoning
  • 1 cup beef broth
  • 8 oz egg noodles, uncooked

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, brown the ground beef for 5-7 minutes, breaking it apart with a spatula.
  3. Add chopped onions and bell peppers; sauté until softened (3-4 minutes).
  4. Stir in minced garlic and cook for another minute.
  5. Pour in the beef broth and sprinkle Italian seasoning; let simmer for 5 minutes.
  6. Cook egg noodles according to package instructions; drain and combine with the beef mixture.
  7. Layer half of the mixture in a greased baking dish, top with half the cheese, add the remaining mixture, then top with the rest of the cheese.
  8. Bake for 20-25 minutes until bubbly and golden.
