- 2 bell peppers (1 green, 1 red), chopped
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 2 cups shredded cheddar cheese
- 1 tsp Italian seasoning
- 1 cup beef broth
- 8 oz egg noodles, uncooked
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium-high heat, brown the ground beef for 5-7 minutes, breaking it apart with a spatula.
- Add chopped onions and bell peppers; sauté until softened (3-4 minutes).
- Stir in minced garlic and cook for another minute.
- Pour in the beef broth and sprinkle Italian seasoning; let simmer for 5 minutes.
- Cook egg noodles according to package instructions; drain and combine with the beef mixture.
- Layer half of the mixture in a greased baking dish, top with half the cheese, add the remaining mixture, then top with the rest of the cheese.
- Bake for 20-25 minutes until bubbly and golden.
