- 2 tbsp fresh parsley, chopped

Instructions
- 1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until fragrant (about 2-3 minutes).
- 2. Season chicken thighs with salt and pepper. Add to the pot and cook until browned on all sides (approximately 5-7 minutes).
- 3. Stir in orzo pasta and chicken broth. Bring to a gentle simmer while scraping any browned bits from the bottom.
- 4. Once the orzo is nearly cooked (after about 10 minutes), fold in fresh spinach, thyme, lemon zest, and parsley. Cook until spinach wilts.
- 5. Taste and adjust seasoning if necessary, then serve hot with additional herbs for garnish.
