Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup fresh vegetables (bell peppers, peas, or carrots)
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the vegetables and mincing the garlic.
  2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent; add garlic and cook for another minute.
  3. Add chicken breasts to the pot. Season with salt, pepper, paprika, and thyme. Sear each side until golden brown (about 5 minutes per side).
  4. Stir in long-grain rice and pour in the chicken broth; mix well to combine.
  5. Add chopped vegetables to the pot and stir gently.
  6. Cover the pot and reduce heat to low. Let simmer for approximately 20 minutes until the rice absorbs all the liquid completely.
