- 4 garlic cloves, minced
- Juice of 1 lemon
- 2 medium zucchinis, sliced into thin rounds
- 1 cup cherry tomatoes, halved
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley or basil, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Spread sliced zucchini and halved cherry tomatoes on the baking sheet.
- In a bowl, mix minced garlic, olive oil, lemon juice, salt, and pepper.
- Place salmon fillets skin-side down on top of the veggies and brush with the garlic-lemon mixture.
- Bake for 15–20 minutes until the salmon flakes easily with a fork; broil for an additional 1–2 minutes for a crispy top.
