Description

One-Pan Lemon Garlic Salmon is a quick and flavorful dish featuring succulent salmon fillets, vibrant veggies, and a zesty lemon-garlic sauce – perfect for busy weeknights or impressing guests.


Ingredients

  • 4 salmon fillets (fresh or thawed)
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • 2 medium zucchinis, sliced into thin rounds
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Spread sliced zucchini and halved cherry tomatoes on the baking sheet.
  3. In a bowl, mix minced garlic, olive oil, lemon juice, salt, and pepper.
  4. Place salmon fillets skin-side down on top of the veggies and brush with the garlic-lemon mixture.
  5. Bake for 15–20 minutes until the salmon flakes easily with a fork; broil for an additional 1–2 minutes for a crispy top.
  6. Garnish with fresh parsley or basil before serving warm.
