- 1 green bell pepper, chopped
- 1 medium red onion, sliced
- 2 medium zucchinis, sliced
- 3 tbsp extra virgin olive oil
- 2 tsp garlic powder
- 2 tsp dried oregano
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, drizzle olive oil over the chicken breasts and season with garlic powder, oregano, paprika, salt, and pepper. Massage the spices into the chicken.
- Arrange the seasoned chicken on a large baking sheet or roasting pan. Scatter the chopped bell peppers, zucchini, and red onion around the chicken.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
