Description

Treat your mom to a delightful Overnight French Toast Casserole, bursting with flavors of vanilla and cinnamon—an unforgettable centerpiece for Mother’s Day brunch!

Ingredients

Scale
  • 8 slices thick brioche or challah bread, cubed
  • 6 large eggs
  • 2 cups whole milk (or almond/oat milk)
  • 1 tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • 1/4 cup maple syrup (plus extra for serving)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with nonstick spray.
  2. Cube the bread into approximately 1-inch pieces and distribute evenly in the prepared baking dish.
  3. In a mixing bowl, whisk together the eggs, milk, cinnamon, and vanilla until fully incorporated.
  4. Pour the egg mixture over the bread cubes, ensuring each piece is well-soaked. Gently press down if necessary.
  5. Drizzle maple syrup over the top, cover with plastic wrap, and refrigerate overnight to meld flavors.
  6. The next morning, remove from the fridge, uncover, and bake for 45-50 minutes until puffed and golden brown on top.
  7. Allow to cool slightly before dusting with powdered sugar and serving warm alongside fresh fruit or whipped cream.

Notes

  • For added flavor, mix in your favorite fruits such as berries or bananas before soaking the bread.
  •  Stale bread works best for better absorption of the custard mixture.
