- 8 cups stale challah bread, cubed
- 8 large eggs
- 2 cups whole milk (or almond/oat milk)
- 2 tsp ground cinnamon
- 2 tsp pure vanilla extract
- ½ cup maple syrup (plus more for serving)
- 1 cup fresh berries (strawberries or blueberries)
Instructions
- Grease a 9×13-inch baking dish with butter or cooking spray.
- Cube the stale challah into bite-sized pieces.
- In a large bowl, whisk together eggs, milk, cinnamon, vanilla extract, and half of the maple syrup until smooth.
- Gently fold in the bread cubes and fresh berries until well-coated. Allow to soak for 15 minutes.
- Transfer the mixture to the prepared baking dish, cover tightly with plastic wrap, and refrigerate overnight.
- Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-50 minutes until golden brown.
