Ingredients

  • 8 cups stale challah bread, cubed
  • 8 large eggs
  • 2 cups whole milk (or almond/oat milk)
  • 2 tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • ½ cup maple syrup (plus more for serving)
  • 1 cup fresh berries (strawberries or blueberries)

Instructions

  1. Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Cube the stale challah into bite-sized pieces.
  3. In a large bowl, whisk together eggs, milk, cinnamon, vanilla extract, and half of the maple syrup until smooth.
  4. Gently fold in the bread cubes and fresh berries until well-coated. Allow to soak for 15 minutes.
  5. Transfer the mixture to the prepared baking dish, cover tightly with plastic wrap, and refrigerate overnight.
  6. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-50 minutes until golden brown.
