Memorial Day Grilled Fish Tacos are a delightful way to kick off summer, featuring flaky fish wrapped in warm tortillas, topped with zesty slaw and creamy avocado for a fresh flavor explosion.


Ingredients

  • 1 lb fresh tilapia or cod
  • 8 small corn tortillas
  • 2 cups shredded cabbage
  • 2 tbsp lime juice
  • 1 cup salsa (pico de gallo recommended)
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. Rinse the fish under cold water and pat dry.
  2. Rub the fish fillets with olive oil, salt, pepper, garlic powder, and any additional spices. Let sit while you prepare other ingredients.
  3. Preheat grill to medium-high heat. Grill the fish for 4-5 minutes on each side until it flakes easily.
  4. Warm tortillas on a skillet or grill for about 30 seconds per side.
  5. In a bowl, combine shredded cabbage with lime juice and salt to make slaw.
  6. Flake the cooked fish using two forks and assemble tacos by layering tortillas with fish, slaw, avocado, salsa, and cilantro.
