- 8 oz tri-color rotini pasta
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1 cup bell peppers, chopped (any color)
- 1/2 cup Italian dressing
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil or parsley, chopped
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cools, prepare the veggies: halve the cherry tomatoes, dice the cucumber, slice the red onion, and chop the bell peppers.
- In a large bowl, combine cooled pasta and prepared vegetables. Gently mix using two spoons.
