  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 6 garlic cloves, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Carrots and potatoes for roasting (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and season generously with salt and pepper inside and out.
  3. Stuff the cavity with halved lemons and herb sprigs (rosemary and thyme).
