Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Chop the carrots, potatoes, and onions into bite-sized pieces. Mince the garlic finely.
  2. Set the Instant Pot to sauté and drizzle in oil. Brown the beef chuck roast for about 4 minutes on each side until golden.
  3. Add chopped onions and minced garlic; sauté for an additional 2 minutes until fragrant. Stir in tomato paste.
  4. Pour in beef broth, scraping any browned bits from the bottom of the pot. Add carrots, potatoes, thyme, bay leaf, salt, and pepper.
  5. Secure the lid and cook on high pressure for 35 minutes. Allow natural pressure release for about 10 minutes before manually releasing any remaining pressure.
  6. Stir well before serving.

Notes

  • For added flavor, consider using sweet potatoes or adding mushrooms.
