Ingredients

  • 1 lb gnocchi (fresh or store-bought)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • Zest of 1 lemon (optional)

Instructions

  1. Boil a large pot of salted water and cook the gnocchi until they float (about 3-4 minutes). Drain and reserve some pasta water.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (30 seconds).
  3. Add fresh spinach to the skillet and stir until wilted (about 2 minutes).
  4. Pour in the heavy cream and let it simmer gently until slightly thickened (3-5 minutes).
  5. Stir in grated Parmesan cheese until melted and creamy; adjust thickness with reserved pasta water if needed.
  6. Fold in cooked gnocchi along with dried herbs, salt, and pepper to taste. Mix well.
