Ingredients

  • 4 Poblano peppers
  • 2 cups shredded Monterey Jack and cheddar cheese
  • 6 large eggs
  • 1 cup whole milk

  • 4 cups tortilla chips
  • 1 cup black beans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté chopped onions and diced poblano peppers for 5-7 minutes until softened.
  3. In a large bowl, whisk together eggs and whole milk; season with salt and pepper.
