Description

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust per taste)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Pita bread or flatbreads for wrapping
  • 1 cup fresh vegetables (lettuce, tomatoes, onions)

Instructions

  1. In a large bowl, combine olive oil, garlic, cumin, coriander, paprika, cayenne pepper, lemon juice, salt, and pepper. Add chicken thighs and mix well. Cover and refrigerate for at least one hour.
  2. Preheat your grill or oven to 425°F (220°C).
  3. Grill the chicken for 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F). Alternatively, place on a lined baking sheet if using the oven.
  4. Allow the cooked chicken to rest for 5 minutes before slicing into strips.
  5. Warm the pita bread slightly on the grill or in a pan.
  6. Assemble by layering sliced chicken onto warm pitas with fresh vegetables.
