- 2 tbsp olive oil

- 2 tsp ground coriander

- Juice of 1 lemon
- Salt and pepper to taste
- Pita bread or flatbreads for wrapping
- 1 cup fresh vegetables (lettuce, tomatoes, onions)
Instructions
- In a large bowl, combine olive oil, garlic, cumin, coriander, paprika, cayenne pepper, lemon juice, salt, and pepper. Add chicken thighs and mix well. Cover and refrigerate for at least one hour.
- Preheat your grill or oven to 425°F (220°C).
- Grill the chicken for 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F). Alternatively, place on a lined baking sheet if using the oven.
- Allow the cooked chicken to rest for 5 minutes before slicing into strips.
- Warm the pita bread slightly on the grill or in a pan.
