Ingredients

  • 3 boneless skinless chicken breasts (about 1 lb)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups egg noodles
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional 30 seconds until fragrant.
  3. Add chicken breasts, carrots, celery, and chicken broth. Bring to a simmer.
  4. Season with thyme, salt, and pepper; simmer for 20 minutes.
  5. Remove chicken from the pot, shred it using two forks, then return to the pot.
  6. Stir in egg noodles and cook for an additional 10-15 minutes until noodles are tender.

Notes

  • For extra veggies, consider adding spinach or peas during the last few minutes of cooking.
  • To prevent mushy noodles, cook them separately and combine just before serving.
