- 3 boneless skinless chicken breasts (about 1 lb)
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 cups low-sodium chicken broth
- 2 cups egg noodles
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional 30 seconds until fragrant.
- Add chicken breasts, carrots, celery, and chicken broth. Bring to a simmer.
- Season with thyme, salt, and pepper; simmer for 20 minutes.
- Remove chicken from the pot, shred it using two forks, then return to the pot.
- Stir in egg noodles and cook for an additional 10-15 minutes until noodles are tender.
Notes
- For extra veggies, consider adding spinach or peas during the last few minutes of cooking.
- To prevent mushy noodles, cook them separately and combine just before serving.
