Ingredients

  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 12 oz fusilli or penne pasta
  • 8 oz fresh mozzarella cheese, cubed
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add seasoned chicken breasts and cook for 6-8 minutes until golden brown and cooked through. Remove from skillet and slice.
  3. In the same skillet, add minced garlic and Italian seasoning; sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream, stirring gently until simmering. Add mozzarella and stir until melted.
  5. Toss in the drained pasta and sliced chicken, mixing well to coat everything in the creamy sauce.
  6. Serve hot, garnished with fresh basil if desired.
