- 1 cup shredded cheddar cheese
- 1 bell pepper, diced
- 1 medium onion, diced
- 2 tsp cumin
- 1 tsp chili powder

- Fresh cilantro (optional, for garnish)
- Salsa or sour cream (for serving)
Instructions
- Chop the bell pepper and onion into small pieces and set aside.
- Heat olive oil in a pan over medium heat. Sauté the onions and bell peppers until softened.
- Stir in the rinsed black beans, cumin, and chili powder. Cook until heated through.
- On one half of each tortilla, place a portion of the black bean mixture followed by shredded cheese. Fold the tortillas in half.
- In a separate pan over medium-high heat, cook each folded quesadilla for about 3-4 minutes per side or until golden brown.
- Remove from heat, slice into wedges, and serve with salsa or sour cream.
