- 2 medium yellow onions, diced

- 2 bell peppers (red or green), chopped
- 2 medium carrots, sliced
- 1 can (14.5 oz) diced tomatoes
- 2 cups low-sodium beef broth
- 2 tbsp sweet Hungarian paprika
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the beef with salt and pepper. In a large pot, heat olive oil over medium-high heat and sear the beef until browned on all sides. Remove the beef from the pot.
- In the same pot, sauté onions and garlic until translucent.
- Add bell peppers and carrots; cook until slightly softened.
- Stir in diced tomatoes, beef broth, paprika, and bay leaves. Return the beef to the pot.
- Bring to a gentle simmer and cover. Cook for about 1 hour until the beef is tender, stirring occasionally.
- Taste and adjust seasoning as necessary before serving.
