  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 2 medium yellow onions, diced
  • 4 garlic cloves, minced
  • 2 bell peppers (red or green), chopped
  • 2 medium carrots, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium beef broth
  • 2 tbsp sweet Hungarian paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the beef with salt and pepper. In a large pot, heat olive oil over medium-high heat and sear the beef until browned on all sides. Remove the beef from the pot.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add bell peppers and carrots; cook until slightly softened.
  4. Stir in diced tomatoes, beef broth, paprika, and bay leaves. Return the beef to the pot.
  5. Bring to a gentle simmer and cover. Cook for about 1 hour until the beef is tender, stirring occasionally.
  6. Taste and adjust seasoning as necessary before serving.
