- 8 oz penne pasta
- 1 cup cherry tomatoes, halved
- 8 oz block-style feta cheese
- 4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes and minced garlic. Drizzle with olive oil, season with salt and pepper, and toss to coat.
- Place the block of feta cheese in the center of the tomatoes.
- Bake in the oven for 30-35 minutes until tomatoes are blistered and feta is softened.
- While baking, cook penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Once baked, mash the feta into the tomatoes with a fork until well combined.
- Mix the cooked pasta with the tomato-feta mixture, adding reserved pasta water as needed to achieve desired consistency.
- Serve hot, garnished with fresh basil.
Notes
- For added flavor, sprinkle red pepper flakes on top before serving.
- Feel free to substitute cherry tomatoes with other seasonal vegetables like bell peppers or zucchini.
