Description

Baked feta pasta with cherry tomatoes is a simple yet delicious dish that combines creamy feta and sweet tomatoes for a comforting meal perfect for any occasion.


Ingredients

  • 8 oz penne pasta
  • 1 cup cherry tomatoes, halved
  • 8 oz block-style feta cheese
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes and minced garlic. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  3. Place the block of feta cheese in the center of the tomatoes.
  4. Bake in the oven for 30-35 minutes until tomatoes are blistered and feta is softened.
  5. While baking, cook penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  6. Once baked, mash the feta into the tomatoes with a fork until well combined.
  7. Mix the cooked pasta with the tomato-feta mixture, adding reserved pasta water as needed to achieve desired consistency.
  8. Serve hot, garnished with fresh basil.

Notes

  • For added flavor, sprinkle red pepper flakes on top before serving.
  •  Feel free to substitute cherry tomatoes with other seasonal vegetables like bell peppers or zucchini.
